Persian Lime Pie

You can easily make a classic key lime pie using Persian limes instead. Persian limes are often much easier to find in the store than key limes are, and they're easier to juice. 

For this recipe, you'll need:

The filling

  • 2/3 cup of Persian lime juice and 2 tsp grated lime zest (about 3-4 limes)
  • 14 oz can of condensed milk
  • 4 large egg yolks

The crust

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup white sugar
  • 6 tbsp melted butter
  • 1/2 tsp cinnamon

The topping

  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Mix the crust ingredients, press into a pie pan, and bake for 7 minutes. Then whisk together all the ingredients for the filling. Pour the filling into the pie crust and bake for 20 minutes. 

Let the pie cool for an hour, then place it in the fridge for at least 3 hours. Before serving, beat together the topping. Finish the pie with whipped topping, lime slices, and lime zest for garnish. 

Limeade

If you're looking for simple recipes using fresh limes, limeade is perfect. A refreshing drink on a hot day or whenever you need a tart pick-me-up, limeade is quick and easy to make using fresh Persian lime juice. 

You'll need: 

  • 1 cup of Persian lime juice (about 4-5 limes)
  • 7 to 8 cups of water
  • 1 cup of sugar

Combine the lime juice and water in a large pitcher. Stir in sugar to taste. Allow the limeade to chill before serving. Garnish with a slice of lime. 

Lime Cilantro Rice

This flavorful rice is the perfect side dish to pair with your favorite meats or veggies. 

You'll need:

  • 2 tbsp Persian lime juice and 1 tsp lime zest
  • 2 cups water
  • 1 cup long-grain white rice
  • 1/2 cup chopped cilantro
  • 1 tbsp butter

Boil the water, then stir in the rice and butter. Set heat to low and let the rice simmer until it's tender. Stir in the lime juice, lime zest, and cilantro just before serving, and enjoy.
