Salsa Canning with Lime

Salsa canning is a great method used when you have too many tomatoes growing and don't want to waste them. By canning your salsa, you can use your excess tomatoes and preserve them in your fridge until it is ready for use.

When canning salsa, you follow the recipe for your favorite salsa, and instead of using vinegar, you can use lime juice to introduce acidity into the can. Mason jars serve as great "cans" for your salsa.
