These citrus fruits are jam-packed full of vitamins and nutrients that are essential to daily life

However, it can be difficult to integrate this superfruit into recipes. That's why we are going to show you 3 delicious recipes that include red grapefruit.

Red Grapefruit Meringue Pie

If you are a fan of lemon meringue pie like many people are, you are going to love this grapefruit spin. 

Ingredients you will need include:

  • 2 Cups of red grapefruit juice
  • 1 1/3 Cups of your sweetener of choice (sugar, xylitol, monk fruit, etc...)
  • 1/3 Cup cornstarch
  • 2 Tbsp of butter
  • 1/2 Tsp of lemon extract
  • 3 Large eggs
  • 1/4 Tsp cream of tartar

You'll start by adding either your homemade dough or storebought dough into your 9-inch pie pan. From there, you will begin mixing your meringue ingredients into a large bowl. 

It's important that you separate your egg yolks and whites, as the whites are for the meringue and the yolks are for the filling. Beat your meringue to a whip. 

In a saucepan, bring your sweetener, grapefruit juice, cornstarch, butter, lemon extract, and egg yolks to a simmer and add in 3/4 cup of water. 

Add these ingredients to the pie pan, first filling then meringue, and put the pie into an oven pre-heated to 350 degrees for 10 to 12 minutes. 


Avocado Grapefruit Salad

There's nothing quite like a refreshing citrus salad. It's common to add oranges to a salad, but rarer to see grapefruit. This is a great alternative!

You'll need your favorite salad ingredients. We recommend spinach leaves and arugula, but you are the master of your own salad.

Peel and slice your grapefruit and add into a bowl with 1 or 2 tbsp of your choice of sweetener to take some of the bitterness of raw grapefruit. 

Mix up your greens with some walnuts, thinly sliced onion, and avocado. Put the grapefruit slices on top and drizzle over the remaining juices from the bowl. 

And there you have it! An extremely refreshing and healthy salad that can be a mean of its own or a side dish. 

Grapefruit Poppy Seed Bread

This bread is incredible and everyone in your family will absolutely love it! 

Here are the ingredients you will need:

  • 1 Cup of softened butter
  • 2 Cups of flour
  • 1-2/3 Cups of your choice of sweetener
  • 1 Tsp of salt
  • 1/2 Tsp of baking powder
  • 3 Large eggs
  • 3/4 Cup of vanilla yogurt
  • 3 Tbsp of poppy seeds
  • 1/4 Cup of grapefruit juice
  • 2 Tbsp of grapefruit zest
  • 1-1/2 teaspoons vanilla extract

Start by pre-heating your oven to 350 degrees and grease your 9 by 5-inch loaf pan. Add to a large bowl all of your ingredients one at a time, beating between each.

Once you've got all ingredients mixed together, add to your loaf pan and put it into the oven for 55 minutes to an hour. 

Let cool, slice, and enjoy!
