How to Make a Ginger Mojito
There are two main elements when it comes to the mojito: the "mojito" and the simple syrup.
First, you'll need to prepare the simple syrup. We recommend that you let it sit overnight for the best results.
How to: Simple Syrup
Place your raw sugar and water into a saucepan. Heat over medium to low and stir to dissolve the sugar. Once the sugar is dissolved, remove it from heat.
Add the lemongrass, mint, and kaffir lime leaves. Leave these in for a few hours or overnight before you strain. This simple syrup will stay good for a couple of weeks in a sterile bottle.
How to: Mojito
In a glass, place the simple syrup, lime, and rum. Use a muddling stick to get the excess juice from the lime.
No muddling stick? No worries, just use a spoon!
Take the mint leaves, and rub them around the brim of the glass before you toss them in. Finish off with ice and sparkling water before you stir.
How to: Garnish
This is when you get to style your beverage! Try "interesting" ideas, especially if you have guests to impress. You can simply top with your lime wheels, mint springs, and lemongrass stalk for a tasty-looking ginger mint mojito!

*The common name for this plant and leaves is 'Kaffir' lime, but 'Kaffir' is an offensive word from Southern Africa. It has coincidentally used in Southeast Asia as the name for this plant, without a harmful intent. However, due to the growing international popularity of the fruit and leaves, we and others have transitioned to its alternate name: Makrut Lime.
