Coconut & Lime Chicken

Kaffir lime recipes with chicken like this zesty dish are always a good choice!

Ingredients:

  • 8 skinless, boneless chicken thighs
  • 2 oz desiccated coconut
  • zest and juice of two kaffir limes
  • 2 tsp medium curry powder 
  • 1 tbsp vegetable oil

Preheat the oven to 400ºF. Put the chicken, curry powder, lime zest, and juice in a bowl and mix well before adding the coconut. Place the coated chicken onto a rack inside a roasting tin, drizzle with oil, and then bake for 25 minutes. Serve with rice and extra lime juice. 

Lime Syllabub with Raspberries

This refreshing dessert is easy to make for the perfect summer treat. 

Ingredients:

  • 13.5 fl. oz double cream
  • 8 tbsp caster sugar
  • juice of six kaffir limes, plus the zest of two limes
  • raspberries

In a small saucepan, bring the cream and sugar to the boil. Stir constantly while it boils for around three minutes. Turn off the heat and stir in the lime juice and most of the zest, then divide the mixture between four small pots.

Chill for at least two hours until set. When you're ready to serve, top each dessert with raspberries and some extra zest. 

Beef & Lime Tacos

Zesty and spicy, these tacos are a real taste sensation. 

Ingredients: 

  • 1 lb ground lean beef 
  • juice and zest of two limes
  • 8 corn tortillas
  • chopped garlic
  • 1/2 teaspoon red-pepper flakes
  • avocado, jalapenos, and sour cream for serving

Mix the beef, lime juice, garlic, and pepper flakes with a little salt. Cook the beef mixture in a large skillet until browned. Serve on the tortillas with the accompaniments and extra lime wedges. 

Ginger & Lime Loaf

You'll love the zingy lime twist on the traditional ginger cake!

Ingredients:

  • 7 oz self-raising flour
  • 7 oz soft butter
  • 7 oz light brown sugar
  • juice and zest of two kaffir limes
  • 4 eggs
  • 1 tsp vanilla extract
  • 1.5 tsp ground ginger
  • half tsp baking powder
  • 4 tbsp chopped stem ginger
  • 2 tbsp dark brown sugar

Preheat the oven to 350ºF then grease and line a 2 lb loaf tin. Beat the butter and light brown sugar in a large bowl until light and fluffy, add the eggs one by one and mix well.  

Slowly add the flour, ground ginger, and baking powder, then mix in the lime juice, vanilla, and 1 tbsp stem ginger. Spoon the mixture into the loaf tin and bake for 50-55 minutes. 

While your loaf is baking, make the syrup. Heat the dark brown sugar, half the lime zest, 2 tbsp of water, and 3 tbsp of stem ginger in a pan on a low heat until it becomes a thick syrup. When your cake has cooled, use a fork to prick holes in the top then drizzle the syrup over it, before topping with the remaining lime zest.
