Lemon Chicken

This healthy dinner takes about 20 minutes to make and will fuel you for hours!

Pound or slice one pound of boneless skinless chicken breasts until they are about three-fourths of an inch thick. Toss them in a dish with one-fourth cup flour and one-half tsp. of salt and pepper until they are coated. Place them in a pan with two tbsp. of butter over medium heat and saute for three to five minutes on each side or until golden brown.

Once the chicken is removed, lay two lemons' worth of slices in the bottom of the pan and let them caramelize for a few minutes on each side. Once browned, layer your lemons over the chicken and enjoy your healthy dose of protein and Vitamin C!

Lemon Bars

Among the most popular lemon dessert recipes, lemon bars are light, tart, and perfect for a summer picnic! This easy recipe can be made in about an hour.

To make the crust, blend together one cup of softened butter, two cups of all-purpose flour, and a half cup of white sugar and press it into the bottom of an ungreased 9x13 inch pan. Bake at 350 degrees for 15-20 minutes or until the crust is firm and golden brown.

For the filling, whisk together one and a half cups of sugar, one-fourth cup of flour, four eggs, and the juice from two Meyer lemons. Pour the mixture over the baked crust and bake it for an additional 20 minutes. Once the lemon bars have cooled, top them with powdered sugar!

Glazed Lemon Pound Cake

From the cake to the glaze, this appetizing recipe is lemony through-and-through! 

Mix together three sticks of room temperature unsalted butter, eight oz. of room temperature cream cheese, and one tsp. salt in a large mixing bowl. While mixing, slowly add two and one-half cups of granulated sugar and one package of lemon instant pudding. One by one, begin adding six large eggs to the mixture.

Slow your mixer to the lowest speed and add three cups of sifted cake flour, one cup at a time, and three and one-half tsp. of fresh lemon zest. Finally, pour the mixture into a greased bundt pan and bake at 325 degrees for about 80 minutes.

To make the perfect glaze to complement the cake, simply whisk together one and one-third cups of powdered sugar and three tbsp. of fresh lemon juice. Zest some lemon peel over the top for a beautiful garnish and serve!
